Ingredients:
2 large chicken breasts
¼ teaspoon garlic powder
Salt and pepper, to taste
Flour, for dredging
1 tablespoon olive oil
3 tablespoons butter, divided
3 cloves garlic, minced
¼ cup dry white wine
¼ cup chicken broth
1 cup small tomatoes (grape or cherry), cut in halves
¼ teaspoon Italian seasoning
2 cups fresh baby spinach (packed)
1 tablespoon fresh basil, chopped
Method:
Prep the Chicken: Season the chicken breasts on both sides with garlic powder, salt, and pepper. Lightly dredge the chicken in flour to coat.
Cook the Chicken: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chicken breasts and cook for 5-7 minutes per side, until golden and cooked through. Remove the chicken from the skillet and set it aside.
