Ingredients:

  • 2 large chicken breasts, cut in half lengthwise

  • Flour, for dredging

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • 3 sprigs fresh rosemary

  • ½ cup white wine

  • 3 cloves garlic, minced

  • 3 tablespoons Dijon mustard

  • 1 cup heavy/whipping cream

  • Salt and pepper, to taste

Method:

  1. Prepare the Chicken: Heat the olive oil and butter over medium-high heat in a large skillet. Cut the chicken breasts in half lengthwise to create four thinner cutlets. Dredge each piece lightly in flour.

  2. Cook the Chicken: Add the chicken to the skillet and pan-fry for 5 minutes per side, or until golden brown. Once cooked, remove the chicken from the skillet and set it aside.

  3. Infuse the Sauce: Remove the rosemary needles from the stems and add them to the pan. Let the rosemary cook for about a minute to release its aroma.

  4. Make the Sauce: Pour in the white wine, followed by the minced garlic and Dijon mustard. Stir until the sauce is smooth and combined. Add the heavy cream, stirring gently to incorporate.

  5. Finish the Dish: Return the chicken to the skillet and simmer over medium-low heat for 8-10 minutes, allowing the chicken to cook through and the sauce to thicken. Season with salt and pepper to taste.

  6. Serve: Once the sauce has thickened and the chicken is cooked, serve immediately, spooning the creamy sauce over the chicken.
