Ingredients:
2 ribeye steaks (1.25" thick)
Salt and pepper, to taste
2 tablespoons olive oil
4 tablespoons butter
Cowboy butter
Method:
Prepare the Steaks: Remove the steaks from the fridge 30-60 minutes before cooking to bring them to room temperature. Pat the steaks dry with paper towels and season both sides generously with salt and pepper.
Heat the Skillet: Heat a heavy cast-iron skillet over medium-high to high heat. It’s crucial for the pan to be very hot before cooking. You can test if it’s ready by adding a small drop of water; it should sizzle immediately.
Cook the Steaks: Add the olive oil to the hot pan and swirl it around. Place the steaks in the pan and let them cook undisturbed for about 4 minutes, forming a beautiful sear on the first side. Flip the steaks (using tongs makes this easy) and place a pat of butter on top of each steak. Cook for another 4 minutes for medium-rare (125°F-130°F, which will rise to 130°F-135°F after resting).
Check the Doneness: Ribeye steaks are best cooked medium-rare, but if you prefer them less or more done, adjust the cooking time. Thinner or thicker steaks will also require slight adjustments. The best way to check for doneness is with an instant-read thermometer.
Rest the Steaks: Transfer the cooked steaks to a plate or cutting board and let them rest for 5-10 minutes. This step ensures the steaks remain juicy and tender as they finish cooking.
Serve: Serve the steaks whole or slice them against the grain for a perfect presentation. Top with Cowboy Butter for extra flavor, using it as a dipping sauce or spooning some over the steak.
