This Tuscan Style Creamy Salmon is an easy yet elegant dish that’s packed with flavor. The salmon is seared to perfection with a golden crust and tender, flaky inside, while the creamy sauce with sun-dried tomatoes, spinach, garlic, and a hint of lemon juice elevates the dish to a restaurant-quality level. In just 20 minutes, you’ll have a meal that feels fancy, yet it’s simple enough for a weeknight dinner.

Ingredients:

  • 1 pound fresh salmon, cut into 4 pieces

  • Salt and pepper, to taste

  • ¼ teaspoon garlic powder

  • Flour, for dredging

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • ½ cup chicken broth or dry white wine

  • 1 teaspoon lemon juice

  • ¼ cup sun-dried tomatoes

  • 1 cup heavy/whipping cream

  • 1-2 cups fresh baby spinach

Optional:

  • 1 tablespoon fresh basil, thinly sliced

  • Freshly grated Parmesan cheese

Method:

  1. Prep the Salmon: Season the salmon with salt, pepper, and garlic powder on both sides, then dredge lightly in flour.

  2. Cook the Salmon: Heat the olive oil and butter in a skillet over medium-high heat. Once hot, add the salmon. Cook for 3-4 minutes per side until the salmon has a nice crust. Be careful not to overcook; it should still be slightly underdone in the center. Remove the salmon from the pan and set aside.

  3. Make the Sauce: In the same skillet, add the chicken broth, lemon juice, and sun-dried tomatoes. Let it bubble for a couple of minutes.

  4. Add Cream and Spinach: Stir in the heavy cream and let the mixture cook for another couple of minutes. Reduce the heat to medium-low and add the spinach. Allow it to wilt for about 30 seconds.

  5. Finish the Dish: Return the salmon to the pan and cook for a few more minutes, until the salmon is cooked through and the sauce thickens slightly.

  6. Serve: Serve the dish with freshly sliced basil and freshly grated Parmesan cheese, if desired.

Tips & Notes:

  • Salmon: You can use up to 1 pound of salmon, cut into pieces. Most grocery store salmon fillets are about an inch thick, which should give you an idea of the cooking time. Adjust the cooking time for thinner or thicker fillets.

  • Sun-dried Tomatoes: We used oil-packed sun-dried tomatoes, which are more concentrated in flavor. If you're using sun-dried tomatoes not packed in oil, you may want to use more for the same intensity of flavor.
