Inspired by the popular Marry Me Food TikTok trend, this pasta version is an irresistible, cozy meal that will have you falling in love with every bite. Ingredients:

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • 1 medium onion, chopped

  • 4 cloves garlic, minced

  • 2 tablespoons tomato paste

  • 1/2 cup sun-dried tomatoes

  • 1/2 teaspoon Italian seasoning

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon crushed red pepper flakes

  • 1/2 cup dry white wine

  • 4 cups chicken broth

  • 2 cups cooked rotisserie chicken

  • 1.5 cups uncooked rotini or fusilli pasta

  • 1 cup heavy/whipping cream

  • 1/2 cup freshly grated parmesan cheese, plus more for serving

  • 2-3 cups packed fresh baby spinach

  • 1/2 cup loosely packed fresh basil, torn/sliced

  • Salt & pepper, to taste

Method:

  1. Sauté the Aromatics: In a large soup pot or Dutch oven, add olive oil, butter, and chopped onion. Sauté over medium-high heat for 5 minutes, stirring occasionally, until softened.

  2. Add Garlic and Seasonings: Stir in the minced garlic, tomato paste, sun-dried tomatoes, Italian seasoning, oregano, and crushed red pepper flakes. Cook for another minute until fragrant.

  3. Deglaze with Wine: Add the white wine to the pot and let it bubble for 1-2 minutes, stirring to incorporate the tomato paste mixture.

  4. Simmer the Broth: Add the chicken broth and bring to a boil. Once boiling, add the pasta, reduce the heat, and simmer, covered with the lid slightly open, for 10 minutes. Stir occasionally to prevent the pasta from sticking.

  5. Finish the Soup: Stir in the heavy cream and cooked chicken. Continue cooking for another 4-5 minutes, or until the pasta is tender and the chicken is heated through.

  6. Add Spinach and Basil: Turn off the heat and stir in the parmesan cheese, fresh spinach, and basil. Let the spinach wilt in the hot broth, then season with salt and pepper to taste.

  7. Serve: Ladle the pasta into bowls and top with additional freshly grated parmesan cheese. Serve immediately.

Tips & Notes:

  • Sun-Dried Tomatoes: If your sun-dried tomatoes are packed in oil, be sure to drain them before using. Chop them into small pieces for easier mixing.

  • Pasta: This recipe uses rotini or fusilli, but you can substitute with other short pasta like penne or farfalle.

  • Flavor Adjustments: If you'd like a stronger flavor, add more sun-dried tomatoes or a bit more parmesan. For a little extra creaminess, you can add more heavy cream or a splash of milk.

Pairing Suggestions:

This creamy pasta pairs wonderfully with:

  • Bread: Serve with a warm, crusty dinner roll or Cheesy Garlic Bread for a complete, comforting meal.

  • Salads: A Super Simple Parmesan Arugula Salad pairs perfectly with the richness of this pasta. You can also opt for a simple spring mix with Easy Lemon Tahini Dressing.

  • Side Veggies: Add some roasted cauliflower, sautéed green beans, or roasted asparagus to balance the richness of the dish.
