Tater Tot Casserole

This Tater Tot Casserole is the ultimate comfort food, combining hearty sausage, creamy spinach and cheese, and crispy golden tater tots. Ingredients:

  • 3 tablespoons extra-virgin olive oil

  • ½ cup finely chopped onion

  • 20-ounce chopped spinach, squeezed dry

  • 3 garlic cloves, minced

  • 1 cup whole milk

  • 1 cup heavy cream

  • ½ teaspoon freshly grated nutmeg

  • ½ cup freshly grated Parmigiano-Reggiano cheese

  • ½ cup grated Gruyère cheese

  • Kosher salt

  • Freshly ground pepper

  • 3 large eggs, beaten

  • 1 pound pork sausage

  • 2 pounds frozen Tater Tots

  • Cooking spray

Method:

  1. Preheat the oven to 425°F.

  2. In a large cast-iron skillet, heat 2 tablespoons of olive oil over moderate heat. Add the chopped onion and cook, stirring occasionally, until softened, about 5 minutes. Add the thawed and squeezed spinach, along with the minced garlic, and cook for another 2 minutes until fragrant.

  3. Stir in the whole milk, heavy cream, and freshly grated nutmeg. Cook until the mixture thickens and most of the liquid has evaporated, about 8 to 10 minutes. Add both the Parmigiano-Reggiano and Gruyère cheeses, stirring until well blended and the cheese has melted. Season with salt and pepper to taste. Scrape the mixture into a large bowl and let it cool slightly.

  4. Once cooled, add the beaten eggs to the spinach mixture and mix well. Wipe out the skillet.

  5. In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the pork sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5 minutes. Remove the skillet from heat.

  6. Spread the spinach mixture over the cooked sausage in the skillet, smoothing it into an even layer. Arrange the frozen Tater Tots on top in concentric circles. Lightly spray the tots with canola oil cooking spray.

  7. Bake for about 40 minutes, or until the tater tots are golden, crispy, and cooked through.

  8. Serve immediately and enjoy the comforting layers of this satisfying dish.

  • Make-Ahead: The spinach mixture (without the eggs) can be made ahead of time and refrigerated for up to 2 days. This makes assembling the casserole even easier when you're ready to bake.
