Pistachio Panna Cotta

Ingredients:

For the Panna Cotta:

  • 1 (1/4-oz.) envelope unflavored gelatin (about 2 1/4 teaspoons)

  • 3 tablespoons cold water

  • 2 cups heavy cream (10-30% fat content, based on your preference)

  • 1/2 cup granulated sugar

  • 1 vanilla bean pod, split and scraped

  • 50g pistachio paste

  • 1 teaspoon fine sea salt

  • 2 cups buttermilk

For the Decoration:

  • 50g dark chocolate, shaved or finely chopped

  • A handful of chopped pistachios

Method:

Prepare the Gelatin:

  1. Sprinkle the gelatin over 3 tablespoons of cold water and let it stand for about 5 minutes to dissolve. If you're using leaf gelatin, soak the leaves in a bowl of cold water for 5-10 minutes.

Make the Cream Base:

  1. In a saucepan, combine the heavy cream, granulated sugar, and pistachio paste. Heat the mixture over low heat, stirring regularly until the sugar has dissolved and the pistachio paste is fully incorporated into the cream. Be cautious not to let the mixture boil.

Add the Vanilla:

  1. Once the cream mixture is warm and smooth, remove it from the heat. Scrape the seeds from the vanilla bean pod and stir them into the cream. Discard the vanilla pod.

Dissolve the Gelatin:

  1. Add the gelatin mixture into the warm cream, stirring gently until the gelatin is completely dissolved and the mixture becomes smooth and silky.

Incorporate the Buttermilk:

  1. Whisk in the buttermilk and sea salt, blending everything together until fully combined. Let the mixture cool slightly for about 10 minutes, whisking occasionally to prevent a skin from forming.

Pour and Chill:

  1. Carefully pour the panna cotta mixture into 4 glasses or small serving dishes, filling them about three-quarters full. Place them in the refrigerator and chill for at least 4 hours, or until set (overnight works best for a richer texture).

Decorate:

  1. Just before serving, sprinkle the panna cotta with dark chocolate shavings and a few chopped pistachios for an added touch of crunch and visual elegance. The dark chocolate adds a decadent richness that beautifully complements the creamy pistachio base.

  • Make-Ahead: The panna cotta can be made a day ahead and stored in the refrigerator until you're ready to serve. This allows the flavors to deepen and the texture to become even richer.
