Sunset Mimosa

This Sunset Mimosa is the perfect way to elevate any occasion with its vibrant, refreshing flavor. The sweet and tangy orange syrup, combined with the effervescence of sparkling wine and a hint of orange liqueur, creates a cocktail that's both bright and sophisticated. The twist of orange peel adds a burst of essential oils, making each sip feel like a citrusy celebration.

Ingredients:

  • 1cup fresh orange juice (from 4 oranges), strained and pulp discarded

  • ¾ cup granulated sugar

  • 1 teaspoon orange liqueur

  • ¾ cup chilled sparkling wine (preferably Cava or Champagne)

  • 1 orange peel strip

Method:

Make the Orange Syrup:

  1. In a small saucepan, bring the fresh orange juice and sugar to a simmer over medium heat, stirring occasionally.

  2. Once the sugar has dissolved, reduce the heat to low and let it simmer gently, stirring often, until the mixture thickens slightly — this will take about 2 minutes.

  3. Remove from heat and transfer the syrup to a small jar or pitcher. Let it chill uncovered until cold, about 1 hour. Alternatively, refrigerate it in an airtight container for up to 3 weeks.

Prepare the Mimosa:

  1. To assemble the mimosa, pour the orange liqueur and 1 ½ teaspoons of the orange syrup into a tulip-style Champagne glass (or a white wine glass).

  2. Tilt the glass slightly, and slowly pour the chilled sparkling wine into the glass, allowing it to gently mix with the syrup and liqueur.

  3. Take the orange peel strip and, holding it in one hand, squeeze and rub the peel sides together over the glass to release the essential oils. Drop the peel into the glass for an aromatic touch.

  4. Serve immediately and enjoy the effervescent citrus delight!

Tips & Notes:

  • Make-Ahead: The orange syrup can be made in advance and stored in the fridge for up to 3 weeks. This makes assembling the mimosa quick and easy when you're ready to serve.

  • Sparkling Wine Choices: For the best flavor, opt for a quality sparkling wine, such as Cava or Champagne. If you're looking for a more affordable option, Prosecco works well too.

  • Garnish Variations: Feel free to experiment with garnishes, such as a lime peel, fresh sprig of mint or a few pomegranate seeds for a pop of color.
